The biggest reason why Indore is the food capital of India is not the foodies here, but the food masters who pour hard-work, flavors, and love in each dish they prepare so painstakingly. Among the top famous of Indore’s huge list of famous delicacies, Dahi-Bade is undoubtedly very high on priority, especially if they are from Joshi Ji in Sarafa.

Joshi Ji, the name the owner goes by, is in the business of selling scrumptious snacks since he inherited it from his family. A passion passed from generations, his grandfather laid the foundation, selling Indian snacks like Samosa, Kachori and Bhajiye. Later his father continued the legacy and then passed on to him in 1977, and ever since has been flourishing under Joshi Ji and his sons. One of the major things that are unique to Joshi Ji is the method with which he prepares this country famous delicacy. Joshi Ji pours the fresh Dahi on freshly fried badas, adding mouth-watering chutney on top with a select range of masalas. Once the dish is prepared, he hurls the bowl into the air, without spilling even a drop from the container. This hurling goes on twice or thrice, amusing the spectators, who despite their eagerness to dive into the goodness of the dish, enjoy the show. Another quirk of Joshi Ji is the way he sprinkles the masalas on top of the Dahi Bada. He somehow manages to hold all the five spices in his fist, without spilling or mixing them within his fingers. And like a skilled master that he is, he sprinkles them one by one, starting with Salt, Red pepper, Black pepper, Jeera and finally Ajwain, creating the perfect taste that everyone loves and enjoys.

Other than his skilled showmanship and cooking skills, Joshi Ji is a master talker! He is widely known for his ability to tangle customers with his anecdotes and peculiar style of talking, quips and rhetoric. Joshi Ji ke Flying Dahi Bade is a one of a kind place, where the experience of eating is equally amazing as is the taste of the food. Indore is pieced together by such master creators of food, making it famous far and wide all around the country. Every Indori has without a doubt eaten Joshi Ji ke Dahi Bade once in their lifetime and definitely came back for more. If you’ve been to Indore and never tried it, you’ve missed perfection!
